Ingredients:
- 2 pounds chuck roast
- 1/2 cup balsamic vinegar
- 1/4 cup soy sauce
- 1/4 cup honey
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Optional: Fresh herbs for garnish
Instructions:
- Preheat your oven to 325°F (160°C).
- In a small bowl, whisk together balsamic vinegar, soy sauce, honey, minced garlic, dried rosemary, and dried thyme.
- Season the chuck roast generously with salt and pepper on both sides.
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Once hot, add the chuck roast and sear on both sides until browned, about 3-4 minutes per side.
- Pour the balsamic vinegar mixture over the seared chuck roast in the skillet.
- Cover the skillet or Dutch oven with a lid or aluminum foil and transfer it to the preheated oven.
- Let the roast cook in the oven for about 2 to 2 1/2 hours, or until it is tender and easily shreds with a fork.
- Once cooked, remove the skillet or Dutch oven from the oven. Allow the roast to rest for a few minutes.
- Slice or shred the beef, then serve it with the balsamic glaze from the skillet spooned over the top. Garnish with fresh herbs if desired.
