Jerk Steak & Shrimp over Yellow Rice

Ingredients:

For the Jerk Marinade:

  • 1 pound flank steak, thinly sliced
  • 1/2 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon dried thyme
  • 1 tablespoon ground allspice
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper (adjust to taste for spice level)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Juice of 2 limes
  • Salt and pepper to taste

For the Yellow Rice:

  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon garlic powder
  • Salt to taste

For Garnish:

  • Fresh cilantro, chopped
  • Lime wedges

Instructions:

  1. In a bowl, whisk together all the ingredients for the jerk marinade – olive oil, soy sauce, brown sugar, thyme, allspice, smoked paprika, cinnamon, cayenne pepper, garlic, ginger, lime juice, salt, and pepper.
  2. Place the sliced flank steak and shrimp in separate resealable plastic bags. Pour half of the jerk marinade over the steak and the other half over the shrimp. Seal the bags and massage the marinade into the meat. Allow to marinate in the refrigerator for at least 30 minutes, or preferably overnight.
  3. In a large pot, combine rice, chicken broth, turmeric, garlic powder, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and has absorbed the liquid.
  4. While the rice is cooking, preheat your grill or grill pan over medium-high heat. Grill the marinated steak for 3-4 minutes per side or until it reaches your desired doneness. Grill the shrimp for 2-3 minutes per side or until opaque.
  5. Once the rice is ready, fluff it with a fork and transfer to a serving platter. Arrange the grilled steak and shrimp over the yellow rice.
  6. Garnish with chopped fresh cilantro and serve with lime wedges on the side.
