1.Greek grill chicken salad with easy homemade Tzatziki

A surprisingly quick and easy weeknight grilled chicken salad bursting with Greek flavours and topped with a simple cucumber, yogurt Tzatziki dressing

Ingredients:
Mixed greens spring mixed salad
2 lbs greek grilled chicken, recipe below
1 red onion sliced and grill
1 pint cherry or grape tomatoes halved (optional)
5 oz crumbles feta cheese
1/2 cup pitted kalamata olives
1 medium cucumber peeled and diced
1 recipe easy homemade Tzatziki dressing recipe below
Chick peas ( optional)
Instructions
Place all ingredients atop mixed green salad tossed and serve. 

2. Almond chicken salad

You can also make it with leftover turkey. Serve as salad or make a sandwich 

Ingredients:

1 3/4 pounds cooked chicken breasts or a combination of white and dark chicken meat
1 1/2 cups thinly sliced celery
1/2 cup sun-dried cranberries (important)
1/2 cup toasted almonds

Ingredients for dressing:

1/4 cup whipping cream, whipped softly
1/2 cup + 2 tablespoons mayonnaise
1/2 teaspoon coarse black paper

Instructions:

Chop chicken lightly in a food processor or chop half the meat with a knife and the other half in the food processor (don’t over-do it or you’ll end up with a paste)

Fold in celery, cranberries and almonds

Whip cream and slowly blend in the mayonnaise and coasre black paper

Toss the chicken mixture with the dressing using only enough to moisten well

3 .The ultimate Cobb salad

Ingredients

What i do:
1 cup greek yogurt
1 or 2 teaspoon unsweetened almond milk…(just add milk until it’s the dressing consistency you like)
Whisk those 2 ingredients together until yogurt is a bit more “pourable”.
Then add:
2-4 tablespoons all natural blue cheese crumbles
(Depending on your preference)
1/2 tsp fresh lemon juice
1/4 tsp garlic salt (optional)

To make a healthier Blue cheese dressing, this is what I do:

1 cup greek yogurt
1 or 2 tsp unsweetened almond milk (just add milk until it’s the dressing consistency you like)

Great presentation and delicious salad!

The recipe calls for 1 pound of peeled, cooked shrimp. I happen to think shrimp is much more floverful if roasted in the oven than boild in water. I just toss my shrimp with a few tablespoons of olive oil and maybe 1/2 spoon each of salt and pepper. lay them out in a single layer on a sheet pan, and roast in a 400° oven for 8-10 minutes, just until pink, firm and cooked through. Set aside to cool, then add to your salad

5.Salad stuffed shells

You can also stuff them with tuna fish or chicken salads….

Ingredients:

1 box jumbo pasta shells
1/2 pounds sliced Genoa salami
1 bag chopped romaine lettuce
1cup chopped roma (plum) tomatoes
3/4 cup chopped cucumber
1/3 Cup roasted garlic vinaigrette dressing

4 large heirloom tomatoes, sliced into 1/2 inch wedges
2 cup halved cherry tomatoes
1 Cup sliced Persian cucumber
1/2 cup pitted sliced black olives
1/4 cup mixed herbs, torn into pieces (i used purple and green basil, cilantro, and chives)
1/2 teaspoon salt
1/2 cup greek yogurt
1/4 cup Dijon mustard
2 tablespoons lemon juice

For the dressing:
4 tablespoons olive oil
1 lime juice of only
1 garlic cloves minced
Salt
Paper

For the salad
3 tomatoes, seeded and diced
1 cucumber, peeled, seeded and diced
1 scallions, chopped
1/3-1/2 cup mint leaf, chopped
1 jalapeno Chile, seeded and chopped (optional)

Half Red Onion diced
1 cloves garlic minced
1 large carrot diced
1 medium beetroot diced
1tsp. Dried herbs de Provence (or thyme/tarragon/oregano)

1 Cup French puy lentils
2 cup water
1/4 cucumber diced
1/2 yellow bell paper diced
2 tablespoons parsley chopped

11/2 cups white shared meat rotisserie chicken (skin and bones remove)
